French Onion Soup with Comté Grilled Cheese

Ingredients

Butter50 g
Beef Stock1200 ml
Thyme15 g
Baguette400 g
Comté150 g
Olive Oil
Salt
Black Pepper

Method

Peel and slice all of the onions. Place a large saucepan over a medium heat and add 2 tbsp of olive oil and the onions along with a good pinch of salt.

Cook the onions, stirring occasionally, until they have softened and lost a lot of liquid. After about half an hour they should be pale golden and very soft.

Finely slice and add the garlic and the butter and cook for another 5 mins.

Pour in the stock and scrape the bottom of the pan to deglaze. Pick the thyme leaves and add them to the pan, simmer for another 10 mins.

Now taste the soup and add salt as needed (check first because your stock might already be salty enough).

Slice your baguette into rounds. Separate the soup into oven-proof bowls, add a few slices of the baguette to each bowl and grate over the comté.

Place under a hot grill until the cheese is melted and golden. Finish with black pepper and serve hot!
