Pesto Butter Beans

Ingredients

Cooked Butter Beans2 x 400g Can
Pesto3.5 tbsp
White Wine Vinegar
Parmesan
Chilli Flakes

Method

Tip the butter beans into a saucepan along with the water from their cans, bring to the boil. Add the pesto, taste and season, adding a splash of white wine vinegar if it needs it.

If batch cooking for the week, transfer the pesto butter beans to a container and store in the fridge until ready to eat. Top with some Parmesan and chilli flakes before serving, if you like.
