Orzo Carbonara

Ingredients

Egg4
Parmesan100 g
Orzo500 g
Smoked Bacon300 g
Garlic1 Clove
Chilli Flakes2 tsp
Black Pepper

Method

Grab a bowl. Crack your eggs and seperate the yolks from the whites. Add your egg yolks to the bowl, then grate in the Parmesan and a generous amount of black pepper. Mix with a fork and set it aside.

Chop up your bacon into small bite-size pieces and throw into a cold frying pan. Turn the heat up to medium and cook until crisp.

Bring a saucepan of salted water to a boil and add the orzo. Cook al dente, for 2 minutes less than on the package instructions.

Chop up the garlic and add this to the bacon followed by the chilli flakes. Take a ladle of the pasta water and add this too.

Once your pasta is cooked, drain and reserve the pasta water. Add the orzo to the pan and mix. Add a drop of pasta water to your egg and Parmesan mix and stir until smooth, then pour it into the orzo mixing well. Keep adding pasta water and mixing until you have a silky, creamy texture. Serve it up and tuck into this delightful little dish!
