Plain Flour350 g
Wholemeal Flour70 g
Salt7 g
Bicarbonate of Soda4 g
Buttermilk500 ml
Oats70 g
Method
1
Heat the oven to 230°C. Put a baking tray onto the middle rack of the oven.
2
Sift both flours, salt and bicarbonate of soda into a large bowl, then mix together. Make a well in the centre and pour in the buttermilk. Stir the dough together until no pockets of flour remain.
3
Spoon onto a large piece of baking parchment. Using wet hands, gently pat into a uniform round. Scatter the oats on top and gently pat them all over the loaf.
4
Transfer the dough to the preheated tray. Bake for 45-50 mins until golden brown all over. Allow to cool for at least 30 mins, until just warm, before slicing into it.
